A Simple Soup
What is your biggest barrier to eating healthy foods? The answer for most people is TIME. Well the recipe below takes away that problem because it is so simple to make. Plus, it makes a large portion so you’ll have plenty of leftovers – more time savings! ☺
White Chicken Chili
4 chicken breasts (frozen or thawed)
32 oz chicken bone broth
4 cloves garlic, minced
1 tablespoon cumin
1 tablespoon dried oregano
1 teaspoon salt (or to taste)
1 teaspoon crushed red pepper
1/2 large sweet yellow onion, chopped
2 cans Great Northern Beans, drained
1 can No Salt Added Corn, drained
2 Tablespoons fresh lime juice (~4 limes)
¼ cup fresh cilantro, rough chopped (or more if desired)
Combine chicken breasts, broth and spices in a crockpot. Cover with lid and cook on Low for 6-8 hours or on High for 3-4 hours.
Add chopped onion to crockpot when 1-2 hours are remaining.
Shred chicken with 2 forks, then add beans, corn, lime juice and cilantro. Let cook until soup is warmed through.
If it seems a little bland, add additional seasoning to your taste. My husband added a favorite Mexican seasoning blend of ours.
