Don’t Forget the Salt and Pepper
I really love ground chicken because it’s low in calories, high in protein and tasty! But I don’t have many recipes that use it. So this week I decided to try the recipe below. Unfortunately, I was so tired when I was cooking that I forgot to add the salt and pepper! They still had great flavor, though they were a little bland. 😉
Avocado Chicken Patties
1 lb ground chicken
1 large ripe avocado, cut into small chunks
2 cloves garlic, minced
1/3 cup uncooked quick oats
1 small poblano, diced
½ teaspoon salt
¼ teaspoon pepper
Combine all ingredients except avocado in a medium-sized bowl and mix together until well combined. Then mix in the avocado, being gentle so that most of the avocado cubes retain their shape.
Shape the mixture into 4 patties and cook in a 350°F oven for ~20 minutes or until the internal temperature is at least 165° F.
- Patties keep well in the refrigerator for 2-3 days. They also can be individually frozen.
- As an alternative to the oven, these patties can be grilled just like hamburgers!
